I have made roasted potatoes countless times in my kitchen, especially on busy weeknights when I need a simple side dish that still feels homemade and satisfying.
Over time, I have experimented with different cuts, oven temperatures, and seasoning blends, and I have found that red potatoes consistently give the best balance of texture when roasted properly. They crisp up beautifully on the outside while staying soft and tender inside.
This is one of those recipes I rely on because it is simple, requires minimal prep, and still delivers great results every time. A basic mix of seasonings is all it takes to bring out their natural flavor.

Ingredients

  • 1 1/2 lbs red potatoes, washed and cut into bite-sized pieces

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp dried rosemary (or thyme)

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Directions

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, add the cut red potatoes. Drizzle with olive oil and toss to coat evenly.
  • Sprinkle garlic powder, rosemary, paprika, salt, and black pepper over the potatoes. Mix well so all pieces are evenly seasoned.
  • Spread the potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded.
  • Place in the oven and roast for 30–35 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
  • Remove from the oven and sprinkle with fresh parsley if desired. Serve warm.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 20 minutes, then dry thoroughly before roasting. You can switch up the seasoning with Italian herbs or add grated parmesan cheese during the last 5 minutes of cooking. Leftovers can be stored in an airtight container and reheated in the oven for best texture.
