minutesThese easy oven roasted red potatoes are crispy on the outside and tender on the inside, tossed with simple seasonings and roasted to perfection. They make the perfect side dish for almost any meal and are quick enough for busy weeknights.
Ingredients
1 1/2 lbs red potatoes, washed and cut into bite-sized pieces
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary (or thyme)
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 tbsp fresh parsley, chopped (optional, for garnish)
Directions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, add the cut red potatoes. Drizzle with olive oil and toss to coat evenly.
- Sprinkle garlic powder, rosemary, paprika, salt, and black pepper over the potatoes. Mix well so all pieces are evenly seasoned.
- Spread the potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded.
- Place in the oven and roast for 30–35 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
- Remove from the oven and sprinkle with fresh parsley if desired. Serve warm.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 20 minutes, then dry thoroughly before roasting. You can switch up the seasoning with Italian herbs or add grated parmesan cheese during the last 5 minutes of cooking. Leftovers can be stored in an airtight container and reheated in the oven for best texture.
