Crock Pot Chicken Cacciatore

servingsI’ve relied on slow cooker meals like this many times over the years, especially on days when I know I won’t have the time or energy to stand in the kitchen after work.
This is one of those recipes I turn to when I want something simple that still feels like a real homemade dinner. I usually just add everything into the crockpot in the morning—chicken breast, peppers, onion, garlic, tomato sauce, and seasoning—and let it slowly cook throughout the day.
From experience, I’ve found that slow cooking really brings everything together. The chicken becomes tender, the vegetables soften into the sauce, and the flavors blend in a way that tastes like it took much more effort than it actually did.
I often serve it with a bit of rice to make it a complete meal, and by the time I return home, the aroma alone is enough to make you feel like dinner is already taken care of.
It’s become one of those dependable recipes I keep in rotation for busy days when I still want something warm, filling, and homemade.
Ingredients
3 chicken breasts, fresh or frozen
16 oz can of tomato sauce
1 green pepper, seeded and sliced
1/2 yellow onion sliced
2 cloves of garlic, minced
2 tsp of Italian seasoning
1 tsp of salt (can add more to taste)
Directions
- Pour tomato sauce on the bottom of the crock pot. Add garlic and salt and mix.
- Add chicken, top with the sliced green peppers and onions. Sprinkle with Italian seasoning and salt.
- Turn crock pot on low. If chicken is frozen, cook for 8 hours, if chicken is fresh, cook for 6 hours.
- Serve with Rice or pasta.
