Goat Cheese & Roasted Garlic Brushetta

Perfect appetizer for any meal but goes very well with Italian food. This is an easy recipe with a few steps but well worth it. This recipe is so delicious and packed with rich roasted garlic flavor, creamy goat cheese, and fresh, vibrant toppings that will impress your guests every time.

Ingredients

  • 6 Roma Tomatoes

  • 1 loaf of baguette bread

  • 1/2 white onion

  • 1 package Fresh Basil

  • 2 Bulbs of Garlic

  • 4 TBSP Olive Oil

  • Package of Goat Cheese (take out of fridge to soften)

  • 2 TBSP Balsamic Vinegar

  • Salt and Pepper to taste

Directions

  • Preheat oven to 400 degrees
  • Slice the garlic head in half across the middle and place both halves onto a large piece of foil (large enough to wrap around both parts).
  • Drizzle the raw garlic with olive oil and lightly brush/rub it into the garlic cloves. Then seal the tin foil around the pieces to create a little packet.
    It’s best to loosely wrap the garlic to avoid the cloves touching the foil; otherwise, it can stick.
  • Roast in the oven for about 30 minutes (30-40 is the standard for most ovens). At this point, the garlic should be a golden color and super-soft to touch. You can try and piece and then continue roasting if it isn’t quite at your preferred level.
  • Dice and seed the tomatoes. Place into a bowl.
  • Peel and Dice Onion add into bowl with tomatoes.
  • Chop 8 leaves of Basil and add to the tomato mixture. Feel free to add more or less depending on your preferences. Add 2 Tbsp of Olive Oil and 2 Tbsp of balsamic vinegar. Mix well and refrigerate until garlic is done roasting.
  • When Garlic is done roasting, remove and allow to cool.
  • Slice bread about 1/4 inch thick. Brush with remaining olive oil and put in broiler on low until bread is lightly browned and toasted.
  • Spread Goat cheese on the bread, then top each piece of bread with a clove of garlic. Stick bread back under broiler for two more minutes.
  • Remove tomato mixture from refrigerator and place one tablespoon of mixture on top of the bread. It is ready to serve.
