Campbell’s Tater Tot Casserole

minutesI first started making this casserole on a weeknight when I needed something filling without putting much thought into dinner. I had ground beef, a bag of tater tots, and a few pantry staples, so I decided to layer everything together and see how it turned out.
What surprised me was how well it worked. The seasoned beef forms a rich base, the creamy soup brings everything together, and the melted cheese adds that comforting finish while the tater tots bake up golden and crispy on top.
After making it a few times and adjusting the seasoning and baking time, it became one of those dependable meals I can rely on when the day is busy and I still want something homemade.
It’s simple, hearty, and always gets eaten quickly at the table—especially on nights when everyone wants something warm and satisfying without any fuss.
Ingredients
1 lb ground beef
1 small onion, diced
1 can (10.5 oz) Campbell’s cream of mushroom soup
1/2 cup milk
1 cup frozen mixed vegetables (peas, carrots, corn)
1 1/2 cups shredded cheddar cheese
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 bag (about 32 oz) frozen tater tots
Directions
- Preheat the oven to 375 degrees. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain any excess grease.
- Add the cream of mushroom soup, milk, mixed vegetables, garlic powder, salt, and pepper to the skillet. Stir until everything is well combined and heated through.
- Transfer the beef mixture into a greased 9×13 inch baking dish. Spread it evenly across the bottom. Sprinkle shredded cheddar cheese over the top of the mixture.
- Arrange the frozen tater tots in a single layer on top of the cheese.
- Place the dish in the oven and bake for 35–40 minutes, or until the tater tots are golden brown and crispy. Remove from the oven and let it cool slightly before serving.
Notes
- You can substitute ground turkey or chicken for a lighter version. For extra flavor, add a dash of Worcestershire sauce or top with crispy bacon bits. Leftovers store well in an airtight container and can be reheated in the oven or microwave.
