Roasted red potatoes are one of the easiest side dishes for any protein. It is a great alternative when you are tired of mashed or baked potatoes. You start with a bag of red potatoes. Wash, pat dry, cut into 1″ pieces, toss with oil, butter, and seasonings. Bake them in the oven for 25-30 minutes and they are ready to serve. I love to make these when grilling steak or chicken because they are in the oven while I prepare the meat on the grill. I set a timer on my phone so I know when to come in and check them.

Ingredients

  • 3 lbs small red potatoes cut into 1″ chunks

  • 1/4 cup olive oil

  • 1/4 cup melted butter

  • 1 tsp garlic salt

  • 1 tsp cajun seasoning

  • 1/2 tsp Lawry’s seasoning salt

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup fresh parsley, chopped

Directions

  • Adjust the oven rack to the lowest position. Preheat the oven to 400 degrees. Prepare a baking sheet with parchment paper or spray with non-stick spray.
  • Wash and cut potatoes into 1″ chunks. Pat dry. Add to mixing bowl.
  • Pour olive oil and butter on top of the potatoes, then add all the dry seasonings.
  • Mix well and spread out on the baking sheet.
  • Bake for 25-30 minutes until the potatoes are tender when forked and slightly browned. Take the pan out of the oven at the 10-15 minute mark and mix them to ensure all sides of the potatoes are nicely browned.
  • Top with some fresh chopped parsley and serve.

Notes

  • Any leftovers can be stored in an air-tight container in the refrigerator for 2 days. They reheat well in the microwave.
