Chocolate Chip Banana Bread

hourThis is my family’s favorite. I always keep bananas on hand and love when I see 3 overly ripe ones ready to go. If you don’t have time to make the bread when you notice your bananas getting brown spots, peel them and freeze in a freezer bag. The frozen bananas can be used to make this recipe when time allows. I like to make mini loafs and give them as gifts.
Ingredients
3 Ripe Bananas
2 Cups All Purpose Flour
1 Cup Sugar
2 Large Eggs
1/2 cup Vegetable Oil
1 Tsp Baking Soda
1/2 Cup Chocolate Chips
Directions
- Preheat oven to 300 degrees.
- Mix Bananas, Flour, Sugar, Eggs, Oil and Baking Soda with Mixer until smooth, about 2 minutes. Make sure to scrape sides of the bowl to incorporate all of the dry ingredients.
- Hand mix in the Chocolate Chips
- Pour into a greased bread pan.
- Bake for one hour until cake tester comes out clean. Rest until cooled, slice and enjoy!
Notes
- This recipe can be divided into 4 mini bread pans. The cooking time is about 45 minutes if using smaller pans. Walnuts can be substituted instead of the chocolate chips.
