Easy Oven Roasted Potatoes

minutesRoasted red potatoes are one of the easiest side dishes for any protein. It is a great alternative when you are tired of mashed or baked potatoes. You start with a bag of red potatoes. Wash, pat dry, cut into 1″ pieces, toss with oil, butter, and seasonings. Bake them in the oven for 25-30 minutes and they are ready to serve. I love to make these when grilling steak or chicken because they are in the oven while I prepare the meat on the grill. I set a timer on my phone so I know when to come in and check them.
Ingredients
3 lbs small red potatoes cut into 1″ chunks
1/4 cup olive oil
1/4 cup melted butter
1 tsp garlic salt
1 tsp cajun seasoning
1/2 tsp Lawry’s seasoning salt
1/2 tsp salt
1/2 tsp pepper
1/4 cup fresh parsley, chopped
Directions
- Adjust the oven rack to the lowest position. Preheat the oven to 400 degrees. Prepare a baking sheet with parchment paper or spray with non-stick spray.
- Wash and cut potatoes into 1″ chunks. Pat dry. Add to mixing bowl.
- Pour olive oil and butter on top of the potatoes, then add all the dry seasonings.
- Mix well and spread out on the baking sheet.
- Bake for 25-30 minutes until the potatoes are tender when forked and slightly browned. Take the pan out of the oven at the 10-15 minute mark and mix them to ensure all sides of the potatoes are nicely browned.
- Top with some fresh chopped parsley and serve.
Notes
- Any leftovers can be stored in an air-tight container in the refrigerator for 2 days. They reheat well in the microwave.
