This creamy, cheesy pasta is so easy to make and it is done from start to finish in 30 minutes! Everything is cooked in one pot for easy cleanup. This dish consists of smoked Andouille sausage, diced tomatoes, pepper jack cheese, macaroni, chicken broth, stewed tomatoes, cream cheese, and milk. Everything is cooked in the same pot then following a 12-14 minute simmer and it is done.

I was concerned that the pasta wouldn’t be done because I have never made pasta this way. As it simmers, the pasta soaks up all the liquid and is finished. The cheeses are thrown in at the end for the finale. I topped mine with a little parmesan and some parsley. My family loved it, full of flavor, I didn’t even have to add any seasoning.

Ingredients

  • 1 tsp olive oil

  • 1 12.8 oz package of smoked Andouille sausage, sliced thin

  • 1/2 cup onion

  • 2 cloves garlic, minced

  • 2 cups chicken broth

  • 1 14.5 oz can, diced stewed tomatoes

  • 1/2 cup milk

  • 8 oz elbow macaroni

  • 1 1/2 cup pepper jack cheese, shredded

  • 2 oz cream cheese

  • 1/4 cup parmesan cheese

Directions

  • Heat olive oil in the bottom of a stockpot over medium heat. Add sausage and onions and cook, stirring frequently, until the sausage is slightly browned, about 3 minutes. Stir in garlic and stir for about 1 additional minute.
  • Add the, chicken broth, tomatoes, milk, and pasta to the pot. Bring to a boil, reduce heat to simmer, and cover until the pasta is cooked about 12-14 minutes.
  • Stir in pepper jack and cream cheese. Allow to melt for a minute to two then stir until fully combined.
  • Top with some parmesan cheese and serve.

Notes

  • Store leftovers in an airtight container for a day or two. Reheats nicely in microwave.
