Breakfast potatoes are a crucial component of a complete breakfast meal. They can be served with a side of eggs, bacon or sausage, toast, and even pancakes. I like to serve them with biscuits and gravy, and sometimes even top them with some of that delicious sausage gravy. This recipe is incredibly flavorful due to the addition of peppers, onions, garlic, and of course, the cayenne pepper. The red potatoes lend a nice texture to the dish. I have made the cayenne pepper an optional ingredient because I understand that not everyone enjoys spicy food. I usually sprinkle a little parsley on top of the potatoes at the end to give it a fancier look.

To ensure your potatoes cook evenly in the pan and don’t come out hard, it’s best to parboil them first. This will also prevent your peppers and onions from burning. I highly recommend this method as it has helped me avoid such issues in the past.

Ingredients

  • 1 1/2 pounds of red potatoes, cut into 1″ cubes

  • 2 tbsp butter

  • 2 tbsp olive oil

  • 1/4 cup of each red, orange and yellow or green pepper, seeded and diced

  • 1/2 cup of white onion, diced

  • 2 cloves of garlic

  • 1/2 tsp garlic powder

  • 1/2 tsp cayenne pepper (optional)

  • 1/2 tsp onion powder

  • salt and pepper to taste

  • parsley for garnish (optional)

Directions

  • Wash and cube up red potatoes to bite-sized pieces, about 1″.
  • Put in a medium pot of water and boil for about 10 minutes until easily pierced with a knife. Drain and set aside.
  • Heat a large skillet over medium heat. Cook peppers, garlic, and onions until onions are translucent.
  • Return the potatoes to the pan. Add garlic powder, cayenne, onion powder, and salt and pepper. Add the lid to the pan and stir every 5 minutes.
  • Cook for about 15 minutes or until the potatoes have a light brown cooked appearance.

Notes

  • You can store any leftovers in an air tight container in the refrigerator. They heat up nicely in the microwave or a skillet on the stove. They keep for 2-3 days.
