A delicious and filling breakfast wrapped in a nice warm tortilla. Sounds perfect! This is a super simple and easy breakfast to make. Can be eaten at the kitchen table or wrapped in foil to head out the door. Both adults and kids will love these breakfast burritos.

Ingredients

  • 1 burrito size flour tortilla

  • 1/4 lb of ground sausage any flavor you prefer

  • 2 large eggs

  • 1/4 cup of shredded cheese of your choice. (I usually use colby jack or pepper jack)

  • Salt and Pepper to taste

  • Salsa or hot sauce

Directions

  • On medium heat, cook ground sausage until fully cooked. Set aside in paper towel lined bowl to absorb grease.
  • In the same pan, scramble the egg, flavoring with salt and pepper. Top with the shredded cheese and incorporate into the eggs.
  • Warm the flour tortilla in the microwave for about 20 seconds.
  • Put the scrambled eggs with cheese and cooked sausage in the middle of the warm tortilla. Pull up the side of the tortilla and lightly hold it in place using your fingers. Use your fingers to hold the sides of the tortilla as you grab the bottom with your thumb and pull it up to fold over the filling. Tuck and roll the tortilla tight around the fillings.
  • Put on a plate and serve with salsa or hot sauce on the side.

Notes

  • These can be made in bulk and wrapped in foil. I will then stick in a cooler for transporting.
