This is something I make almost weekly for my husband. It is a quick, easy and filling breakfast packed with protein. I always keep these ingredients on hand. This is an easy breakfast to eat on the go if you wrap in foil to avoid any tasty drips. Just as easy as going through the fast food drive thru but way fresher and delicious.

Ingredients

  • 1 English Muffin (Thomas’ or other brand of your choice)

  • Jimmy Dean Ground Sausage (any flavor)

  • 1 large egg

  • 1 slice of cheese of your choice

  • Salt and pepper to taste

Directions

  • Make one patty out of the ground sausage (like making a hamburger) about 1/4″ thick and width of the muffin around. Cook in a skillet over medium heat until completely cooked, flip half way in cooking time (total cook time is about 10 minutes). Top the patty with a piece of cheese until melted. The cheese will melt faster if you add some steam by adding a little water to the pan and covering with a lid. As soon as the cheese is melted remove from pan and set aside on a paper towel to absorb grease.
  • Split the muffin and put it in the toaster until it is lightly toasted.
  • Wipe the remaining grease out of the pan with a paper towel. Crack the egg into the same pan. Top with a little salt, pepper or seasoning of your choice. Cook the egg over medium so the yolk is not too runny. When the whites are firm and the bottom of the yolk is set, after 2-3 minutes, flip the egg. turning the egg gently so the yolk doesn’t break. Cook for another 60-90 seconds more and then move to the bottom of the muffin.
  • Remove the toasted muffin from the toaster. Place the sausage and cheese on the bottom piece of muffin then add the egg on top. Place the top on the egg and serve.

Notes

  • Total cook time for this breakfast sandwich is about 20 minutes. Can be wrapped in foil to hand to kids or spouses on their way out the door to work or school in the morning. Can be served with a side of fruit or hash browns.
