Ingredients
1 packet of Dry Knorr’s Leek Soup Mix
1 – 16 oz tub of Sour Cream
1 – 16 oz package of frozen chopped Spinach (make sure to get the chopped)
1 small bread bowl (soup bowl size) – this is optional. It is for display. If you can’t find or don’t want to use the bread bowl, you can display in any bowl.
Directions
- Place frozen spinach in a colander in the sink, run some hot water over it and allow to thaw.
- Mix Sour Cream and Leek Soup Mix in a bowl until well blended.
- Squeeze water out of thawed spinach with your hands as much as possible.
- Mix spinach into the sour cream and leek soup until well blended. If you are not serving right away, store in a plastic storage container in the refrigerator. This can be made the evening before. Leave in the refrigerator until ready to eat.
Notes
- This recipe will only fill a small soup size bread bowl. If you get a larger bread bowl, double the recipe. Don’t leave out on counter too long or the sour cream will spoil.
