Chicken Lettuce Wraps

minutesThis is one of the easiest appetizer or dinner recipes. The ingredients give such great flavor to the ground chicken. It is so much fun to scoop the chicken mixture on the lettuce and eat them like tacos. They are low in carbs since they use lettuce instead of a tortilla. You can eat these like an appetizer but we often eat them for dinner because we can’t just stop at one.
Ingredients
1 tbsp olive oil
1 pound ground chicken
2 cloves of garlic, minced
1 onion, diced
1/2 cup hoisin sauce
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp freshly grated ginger
1 8 oz can of drained and diced water chestnuts
3 green onions, thinly sliced
salt and pepper to taste
1 head of butter or iceberg lettuce
Directions
- Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned 3-5 minutes, crumbling the chicken as it cooks, drain fat.
- Stir in garlic, onion, hoisin sauce, soy sauce, rice vinegar and ginger until onions have become translucent about 1-2 minutes.
- Stir in chestnuts and green onions until tender, ab out 1-2 minutes, season with salt and pepper to taste.
- To serve spon sever tablespoons of chicken mixture in the center of the lettuce leaf like a taco. Fold and enjoy!!
