Nothing completes a meal better than sweet corn slow-cooked in a savory cream sauce! This simple side dish is made with frozen corn, heavy whipping cream, cream cheese, cheddar cheese, salt, and pepper. Seven simple ingredients make an amazing side dish that your family will adore. I have made this for Easter, Thanksgiving, and Christmas and I also have made it for an easy weekday side dish.

My favorite thing about this Crock Pot Cheesy Creamed Corn is all you have to do is dump the ingredients into the crock pot and go about your day. It takes a few minutes to prep and turn on the crock pot for a gourmet-tasting cream corn. This recipe is easily doubled or tripled for a crowd.

Ingredients

  • 32 oz frozen corn

  • 8 oz cream cheese, cubed in 1″ pieces

  • 1/3 cup heavy cream

  • 1/4 cup butter

  • 1/2 cup shredded cheddar cheese

  • 1/4 tsp salt

  • 1/4 tsp fresh ground pepper

Directions

  • Combine all ingredients in the crock pot. Cook on low for 4 hours. Stir at the halfway point to ensure all the ingredients are combined nicely and cooked evenly. Taste the corn to see if you want to add any salt or pepper.
  • You can either serve it in a serving dish at dinner time or keep in the crock pot if your crock pot has a warm setting.

Notes

  • Leftovers keep well for a few days in an air-tight container in the refrigerator and reheat well in the microwave.
  • Jalapenos or green chilis can be added for a spicier version of this recipe.
